Vanilla Coconut Ice Cream with Crispy Quinoa:

  • 2 C organic coconut milk

  • ¼ C local maple syrup

  • ⅛ tsp sea salt

  • 1 ½ tsp pure vanilla extract

  • ¾ C Crispy Quinoa smartBARK!*

Combine all ingredients except smartBARK! in a high-speed blender and blend until smooth.  Pour into an ice cream maker and process according to package directions.  As the ice cream thickens slowly add the smartBARK! Once it has finished, pour into a freezer-safe container with a lid, and freeze for about 4 hours or until firm enough to scoop.

 

*Chop smartBark! into small pieces with a sharp knife.

  • 2-3 Tbs local maple syrup
